Date, Tahini & Coconut Ice Cream (Parev)

A conclusion to our Rosh Hashana 5786 menu, this simple parev (and vegan) ice cream features just 3 ingredients – coconut, tahini and dates, which are one of the Simanim of Rosh Hashana. The ‘Yehi Ratzon’ we make over dates calls for our enemies to be vanquished. After two years at war, with many of Our People still being held captive, this wish is perhaps more wholeheartedly felt by our entire nation than it has been for many years.

This dessert is incredibly simple to make, containing just 3 ingredients, but rounds off any meal with sophistication and a complex, well balanced mouthful. Tahini offsets the sweetness of date syrup, with cool coconut serving as a palate cleanser which is both sweet and refreshing.

On Rosh Hashana we suggest drizzling with more date syrup and serving with spiced honey cake!

Ingredients

  • 1 can (400ml) Coconut Cream
  • ¼ cup Tahini Paste
  • ⅓ cup Silan Date Syrup

Method

  1. Add all ingredients to a freezer-safe airtight container (or double walled freezer tub), and mix together with a whisk or stick blender until aerated. Seal the tub and place into freezer.
  2. Stir after 4-6 hours then return to freezer until completely frozen. 
  3. Serve topped with lashings of  silan, or pair with your favourite spiced honey cake.
