The combination of Spinach, Raisins and Pine nuts, is traditional of the Jews of northern Italy and combines two symbols of Rosh Hashana, Spinach that is quick and abundant growing green and sweet raisins that are symbolic of our wish for a sweet new year. I love the way a mixture of raisins of different colours and sizes looks, but feel free to use whatever you have on hand.
- 2 1/2lb (1 kilo) baby spinach
- 3 tablespoons olive oil
- 1 large onion finely diced
- 1/3 (60g) cups raisins
- 1/3 cup (50g) pine nuts
- salt and freshly ground black paper to taste
Rinse the spinach well and check.
In a large sauté pan toast the pine nuts until browned on both sides, stirring constantly. Remove from heat and set aside. In the same pan add the oil and heat until shimmering, add the onion and sauté until the onions are very soft and translucent. Add the spinach and cook with just the water that’s clinging to the leaves until wilted. This should take about a minute. Add the raisins and pine nuts and sauté briefly to warm through. Season with salt and pepper. Serve warm or at room temperature.
