BROCCOLI BREAKFAST MUFFINS

  • Low calorie cooking spray
  • 1 small red onion, cut in half, and then sliced into thin half moons
  • 12 florets broccoli, steamed
  • 12 eggs, well beaten
  • Salt and pepper to taste

Pre-heat oven to 160C (325F)

Spay a 12 hole muffin tin well with oil spray and set aside.
In a small frying pan over low heat, fry the slice onion in oil spray, stirring constantly until soft and golden, about 5-7 minutes, set aside to cool slightly.

Place one broccoli floret in each well sprayed muffin cup, divide the fried red onion between the muffin cups, you may have some left over (don’t over fill, as the eggs will increase in volume when cooked).
Beat the eggs well with a whisk, season well with salt and pepper, pour the egg over the broccoli and onions.

Bake in the preheated oven for 20 minutes until egg is cooked through and set.
