I start this recipe with leftover baked potatoes, in fact when I make baked potatoes I usually make extras so I can make this recipe the next day.
- 6 medium baked potatoes
- 2 cans of tuna, drained
- 1 carrot, peeled and grated
- ½ cup mayonnaise
- Salt and pepper to taste
- 1 cup grated cheese
Preheat broiler.
Cut baked potatoes in half, lengthwise, keeping the skin intact. Using a spoon scoop out the flesh, leaving a ½ cm border near the skin.
Mash the scooped out potato, and place in a medium bowl. Add the drained tuna, grated carrot and mayonnaise to the mashed potato mix well and season generously.
Scoop potato mixture back into the potato boats, making a mound, sprinkle generously with cheese. Place on a cookie sheet or roasting tin, and broil until the cheese is bubbling.
Serve hot.
