• 1 large (English) cucumber, seeded and diced
  • 6 ripe tomatoes, diced
  • 1 red or orange bell pepper, seeded and diced
  • 6 green onions (scallions), thinly sliced
  • 3-4 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

In a medium bowl, combine all the ingredients and feel free to add more olive oil and lemon if needed.
