One of the questions we’re asked most frequently, especially in the runup to Pesach, is “will this recipe work in an air fryer? And sheepishly, we’ve often had to tell people we haven’t tried it, but that it probably will, and to let us know how they get on! Well, this year, we decided to lean in and buy a new milky air fryer to speed up the process of making matza pizzas, chips and vegetable patties for our toddler. Admittedly, our regular air fryer is usually used mainly for chips, but at a time of year where potatoes are the main carb, we thought it would be a perfect addition to our Pesach kitchen setup. We opted for something small, basic and inexpensive, but it’s been a game-changer so far, and we thought we’d publish this pizza fries recipe as our very first offering, because it’s simply too good not to share!

Kosher meat can sometimes seem prohibitively expensive, but butchering your own chicken is one of the most effective ways of shaving the cost of your meat bill. Part of our budget chicken recipe series, this recipe uses the drumsticks, legs and thighs to create a cost-effective family meal for 4. You may wish to supplement a little extra chicken to feed 4 adults or older children, but with the beans, there really is plenty of filling protein on the plate already. With a few herbs and spices you can elevate a simple chips and beans meal into something fantastic and fun! The best part – this meal (at the time of publishing) costs less than £2.50 per portion, so you can feed a family of 4 for under a tenner!

Root vegetables are a seasonal staple for Sukkot and Rosh Hashana, as well as a Pesach-friendly side and an alternative to white potatoes. These sweet vegetables are also ideal for Rosh Hashana, where we have the custom to eat sweet foods for a “good and sweet new year,” and we eat gourds such as squash as one of the Simanim, representing our desire that, if it be Hashem’s will, that the evil of our verdicts be torn apart, and that our merits be announced before Him.

These tropical staples are a fantastic alternative to potato. Plantains are the larger, more savoury siblings of bananas, whilst cassava is a starchy root vegetable. A tuber crop like yams and potatoes, cassava roots have a woody exterior and have white flesh on the inside. These two versatile ingredients are staples in Africa and the Americas, and can be fried, roasted, boiled or processed into flour. Both ingredients are mild in flavour, but like potatoes are robust and able to take on flavour from stews and marinades. You may need to look in an international grocery store, but most supermarkets with a world foods section will stock these ingredients in their fruit and veg aisles.

A couple of our favourite alternatives to potato, sweet potato and celeriac wedges provide sweetness and earthiness to a meal, and provide a great way to mix up a Passover menu, especially if your custom is not to eat kitniyot such as rice. This recipe is really quick and easy – the longest part is peeling the veg! Seasoning is entirely to taste and these root vegetables are versatile and will accept virtually any herbs and spices you might throw at them!
