Refreshingly Simple Sweetheart Cabbage and Celery Slaw

A simple fresh slaw can lift almost any dish, cutting through with acidity, and salads don’t come much simpler than this sweetheart cabbage and celery slaw. Pairing great with meat dishes, fish or as an extra salad for a lunchbox, this super simple slaw packs a zingy citrus punch and a refreshing crunch. If preparing ahead, keep dry ingredients and dressing separate until ready to serve. Once combined, it will keep refrigerated for 2 days, ready to be enjoyed with other meals. Extremely versatile, we suggest trying it with brisket, chicken or lamb dishes.

Ingredients

  • 3 sticks Celery, thinly sliced
  • Half a Sweetheart Cabbage, shredded
  • 2-3 Spring onions (optional)
  • Salt
  • Pepper

For the Dressing:

  • 3-4 tbsp (homemade) Mayonnaise
  • 1 tsp Honey
  • Juice of half a Lemon
  • Zest of a whole Lemon

Method

  1. Wash and check your ingredients for bugs, according to guidelines.
  2. Toss the cabbage and celery in a large bowl.
  3. Mix together all the dressing ingredients.
  4. Pour dressing over the salad, season generously with salt and pepper and toss well to thoroughly coat the dry ingredients.
  5. Optional: Top with sliced spring onions.
  6. Serve and enjoy.

Leftovers will keep in the fridge for 2 days.
